FRESH GRILLED ARTICHOKES
Ever since one of my friends recommended these artichokes from Monterey Farms I have been keeping them around for many uses. I love eating the whole bag as a snack (cold or warm are both tasty). They can be used as a side dish, or mixed into egg white omelets or a whole grain pasta dish. Available at Whole Foods.

3-INGREDIENT CREAMY TOMATO SOUP: LOWER FAT & SODIUM VERSION
After looking at a few creamy tomato soup recipes on Pinterest, I came up with this simple one on my own and have been given the thumbs up by friends and family. Place 1 can (28 ounces) of San Marzano Peeled Tomatoes, 3 Tablespoons of Trader Joes Organic Whipped Cream Cheese & 1 Tablespoon Extra Virgin Olive Oil in a blender. Heat on stove top and enjoy on it's own or mix in chicken, shrimp or veggies for a complete meal. For extra pizazz, crush a few croutons and sprinkle on top!
1 Serving (Makes 3 servings) = 128 Calories, 7g Fat, 13g Carbs, 3g Sugar, 152mg Sodium & 5g Fiber
FREEZE DRIED FRUIT SNACK BAGS FROM COSTCO
I know many of you are familiar with various brands of freeze dried fruit products. I love Costco's Kirkland brand mini bags of fruit slices when I need a crunchy snack but don't want too many calories. I keep them in my car and bag for those times! Each box has 20 single-serve pouches and come in 3 flavors: Fuji apple, Fuji apple with cinnamon and Strawberry Banana Slices.
