This tasty pasta has only 1 ingredient: Non-GMO Organic Black Beans and is loaded with fiber and protein. I topped it with marinara sauce and Parmesan cheese and my son and husband gave it a thumbs-up! Each serving has 15 grams of fiber, so go slowly if you are not used to high fiber foods. I found this recipe from “My Kitchen Affair” on Pinterest a while back and it’s about time I share it with you too.
This is one of the easiest recipes to make and the taste factor is sky high! You can also make this as a great appetizer or a vegetarian sandwich. If you use approximately 1 teaspoon of oil per tomato, my estimation is each serving has about 150 Calories and 9g Fat.
I just bought additional bags of these artichokes to keep in my freezer. Made with simple and wholesome ingredients, it’s a great way to jazz up grains or salads. I may even try putting this into my next omelet! If you are concerned with the high sodium content, you can mix it with other lower salt ingredients to round out your meal. Available at ShopRite.

I need to thank my friend for this recommendation! If you enjoy eating old-time “fruit leather”, then you must check out Matt’s Munchies. These cute little squares come in individual serving packages and fun to eat. I love the Island Mango flavor, which has a small amount of coconut. When I shop at Trader Joe’s at lunchtime, I grab a package of Broccoli Slaw and Kale Salad with Chicken. This tasty combo also includes sunflower seeds and dried cranberries. The mixture is so tasty, that it doesn’t need the dressing which I toss away.
1 Salad (without dressing) = 270 Calories, 8g Fat, 260mg Sodium, 36g Carbs, 12g Sugar, and 6g Fiber
This unique and tasty kale salad is easy to make and tastes delicious. You could serve this as an appetizer, or add your protein of choice to make it your main dish. Makes 4 servings.
