HERBED FISH & TOMATOES
(You may substitute fish for chicken)
Combine defrosted herb cubes (such as garlic & basil) with 1 teaspoon olive oil – Slather over any type of white fish and chopped tomatoes. Broil for 8-10 minutes. Serve over brown rice.
SPAGHETTI SQUASH PARMESAN
Poke holes in spaghetti squash with fork. Cook in microwave for 18 minutes & then let stand for 5 minutes. Slice in half and scoop out seeds. With fork, scrape out squash strands and put in a baking dish – Coat with tomato sauce & low-fat cheese. Cook under the broiler for a few minutes.
